In M content development, how to hide the user's hands and controllers in their hands from the passthrough view? In other words, we don't want to see the user's hands and controllers held in their hands in the real environment.

To my understanding in pass through the cameras simply shows you what they "see".
There is no coding to make controllers or hands visible, so you also can't make them invisible.
Just my logic...... I might be completely wrong😂

My friend, the pass through relies on physical cameras to see the environment around you , that includes your hands. Have you ever seen a camera that can hide just your hands and show everything else? Think about it. 🙄💡
