Restoration of permanent delete Instagram account over 2 months
Is there any way I can recover my Instagram account two months after deleting it?

With all due respect this forum has absolutely nothing to do with Instagram accounts. Please contact Instagram support. There are some links at the bottom of the page here.
However if you voluntarily deleted your account, it is deleted.. It would be even illegal under data protection laws for Meta to keep the data after you confirmed deletion I would imagine.
