Does Oculus have an open source demo based on OpenXr?
Currently researching the development of OpenXr, does Oculus have any open source projects that I can refer to?

There are a few OpenXR samples included in the native SDK. Details here:

Their useful, as you can learn the order of creating action spaces for hands (for Quest it should happen after attaching action sets to the session, which is not consistent with OpenXR specification, on Oculus PC it doesn't matter).
Couldn't get foveated rendering to work on Quest. It's a bit heartbreaking that a sample made by Oculus does not work properly.
