Simply rendering an already recreated 3d model(either generated from stereo images, kinect, or using something like photosynth) would probably be easier, but then I would be limited by scene complexity and how well it could be captured/reconstructed, I was hoping to have much more detail by doing everything in image space with reference images. My initial motivation was to create stereoscopic videos with a simple camera rig, but just a video in the Rift would not be as immersive as the user actually being able to look around in the environment. Of course I don't even know if my capturing tons of reference images idea is feasible, I was expecting to find examples of people who have already done something similar.
This is the closest paper I have found to what I was thinking of for generating new images, Physically-Valid View Synthesis by Image Interpolation. Most of the papers I have found are related to synthesizing new views from wide baseline cameras for use in teleconferencing applications.
