Dual 1440p monitors + DK2

It is pretty much as you say:
HDMI will run your 1440p up to 120Hz.
Dual link DVI will run 1440p up to 60Hz or 1080p up to 120Hz.
If you are using an adapter on the DVI port then just make sure it supports dual link and you should be fine to run either your 1440p screens or Rift (1080p) off it, so in your case I would go for your 1440p monitors off HDMI and your Rift off dual link DVI adapted to HDMI to get them all running at 75Hz (or if your monitors support it 120Hz).
P.S. You can run DK2 @ 60Hz but obviously that's less then ideal ;)
