I've heard that it is impossible to run dual 1440p monitors at 120hz even with top of the line cards simply because you need to maintain 120 fps on while pushing 1440p pixels on two monitors. You could have your monitors set to 120hz, but it isn't really showing you 120hz because your framerate can't keep up due to the massive number of pixels your card has to render.
I doubt I'll be doing 120hz on either monitor though. And if worse comes to worse, i'll just disable them while rifting. :D
