I feel a simple camera attached to the Oculus Rift that tracks arm, hand & fingers would be really useful. This could then animate an avatar hand. Leap Motion is moving in the the right direction but suffers from a relatively low field of view.
I hope that the new Kinect camera will pick up better hand gestures.
As for Unity & hand gestures... check out this little video I made ( Oculus Rift + Razer Hydra ) the I.K was a simple script I downloaded for free from the Unity3D Wiki site. note: the 2nd video of a bat & ball utilises the I.K arm.
As you can see in the video the fingers don;t exactly wrap around the handle... this could be adjusted to accommodate object shapes but I was simply testing I.K arms attached to the Tuscany demo hands..
