what screen resolution should be used?

The default settings should work OK.
The native resolution is 1280x800. If you want to increase the quality you want to edit the ScreenPercentage property. You can set this to something like 150 or 200 (if you have a good computer). This will increase the size of the back-buffer and thus increase the quality of the image.
Look in UDK\UDK-2013-03\Engine\Config\BaseSystemSettings.ini and search for ScreenPercentage and set it to "150.0" or "200.0".
