Whenever I record gorilla tag, I can here myself in the recording but people can't hear me in game. I was wondering if there was a setting I needed to enable or if it just temporarily removes microphone permissions.

For Gorilla Tag issues, depending on if it's a setting on their end, we recommend heading over to their page, shooting them a message, and seeing what is going on. We can provide a link here for you to get there.
What we can do right now is ask some troubleshooting steps for you to try out and see if this can resolve the issue for you.
Make sure the microphone is clean and not obstructed (On Quest 2, the microphone is 2 pinholes located a few inches apart one on either side of the nose. On Quest 3 the microphones are built into the front plate and the center camera. There is one on top of the center camera and one on either side just below the center camera.
Remove any unsupported third-party accessories that may block the microphone (such as a third-party facial interface, etc.)
Test with multiple games/apps
If happening only in one game/app, check the game/app permission to make sure microphone is enabled
Reset Microphone
Settings > System > Sound > Toggle Microphone
Reboot the headset
