I have this issue with hand tracking that the virtual hands are never completely still which makes playing games like Demeo very hard with hand tracking.
I have tried unpairing and re-pairing the controllers, different lighting such as ambient, very bright, normal medium brightness, daylight etc., also tried on different colored surfaces so the contrast between skin color and the surface under them is good, tried clearing boundary history.
None of this makes a difference. The hands are constantly moving a little bit.

A lot of the hand tracking is prediction based and they do move a little bit. Things are always improving due to the AI model that is used. The more people that use it the better it will become, however it does sound about right from what you've said.

Watching videos of others using it the hands dont move at all. At least not nearly as much as they do for me

And why is it trying to predict anything if im resting my hands completely still on a table? I just saw a video on reddit of someone using the quest 3 in a dark airplane and their hand tracking worked better than mine in daylight.

I ensured all of the criteria that are listed in the link were met. Also factory reseted. It did not solve my issue.
