I have an intel core i7 8th gen processor, 16gb of ram and a low profile GTX 1050ti, would it be compatible with the quest 2 link?

No, it’s well below minimum specs for Link. I’d say that a 1060 6gb desktop gpu is about as low as you can go.
Unless you get a better gpu I suggest you just stick with the Q2 standalone mobile VR. It’s actually pretty good imho.

though I've read several that say it's okay anyway. having a good processor and a lot of RAM I understand why there should be problems?

Hey there! We'd love to help you out with finding the best hardware for Oculus Link. Your processor and amount of RAM should be good to go, but we do recommend you get a newer, more powerful graphics card for Link. The GeForce GTX 1050Ti is not supported with Link. Then why does your website say that one of the minimum system rec. is GTX 1050TI or greater . Sounds like a scam to get you to buy it , then once you do ..hahahaha ur screwed ...nice work
