I have a quest 2 with about 5 games installed. I bought a quest 3 with 2 games installed. I want to play Onward with my son using the quest 2 and me using Quest 3. How do I accomplish my son using Quest 2 and not lose the games installed on it. If I create a Meta account for him and log into the Quest 2 what will happen to the existing installed games?

You can add a second account on the Quest 2.
You are still the admin, the installed games on your account won't be touched by that.
HERE is how to do that.
If you like, you can share the games with the second account, so this one has also access to them, without buying them again.
Look here about multiple accounts and app sharing
BUT.....if you want to play a multiplayer game together (like Onward), each account need to buy its own copy.
You can't play multiplayer together with a shared game.
For games where you can purchase DLCs its also better each account have its own game, because it's always only the main game that can be shared, but not the DLCs.
