I have tested my Quest 2 with a Ubiquity Enterprise Wi-Fi 6E access point, a Ubiquiti AC PRO, and a Ubiquiti AC LITE Wi-Fi 6, all three have the same disconnecting every few seconds issue. I have tried every setting I can change including separating the 2.4Ghz, 5Ghz. and 6Ghz bands. It works perfectly fine with the Spectrum internet Wi-Fi 6 router from the cable company as well as a T-Mobile hotspot 5G modem also Wi-Fi 6. The headset is just extremely picky it seems reading others Wi-Fi issues.

I even tryed turning my laptop into a hotspot and still didnt work
