Today I updated my quest to V71, and now seemenly at random, the internal fan goes to max for a few seconds and then goes back to normal, and it happens every 5 to 10 minutes.
what can I do to fix this, is there a way to roll back to another update?

I understand you have opted in to the Public Test Channel to update to the PTC v71 build?
As far as I know that issue has been flagged to our engineers who have been working hard for a fix to this issue, however some of our community members who are encountering the same issue as you are in this thread here have their issues fixed in the latest hotfix rolled out.
I'd like to ask you to check for some more updates to your headset and see if there are any and hopefully that should fix your issue!
If not you can rollback to v69 by opting out of PTC, and you can do so by following the steps here.
Also if the latest PTC update hasn't sorted your issue, if you could provide us with the following information:
