The Dreamdeck demos you tried are the ones I use to show my Rift to friends. The T-Rex and the tall building are probably the best two, with the small town being a close third. The Climb is also a big hit with my friends, but the most impressive games for me are Project Cars and Elite Dangerous. The problem is that both of those need extra peripherals and a significant time investment - which isn't great for a quick demo.
Others have made the comment that many of the Vive experiences are phenomenal as short demos, but lack long term substance. I know several users of this forum have Vive games they play every day, but as a general rule for both systems the best demos often end up being mediocre in the long run, and despite how amazing they initially seem. With something like The Climb, it's naturally going to expose the fact you can't use your hands. Play Elite Dangerous on both units and you won't realize you're missing hand controls or room scale. Things like integrated sound or the abillity to read small text suddenly stand out.
To me, it seems like you've decided you really want hand interaction and you're unwilling to wait a few months for Touch. In that case I'd say Vive is a better fit for your needs. Whatever headset you pick you'll be happy.
