You can always try Trials on Tatooine on steam if you haven't. I always throw my buddies I know love Star Wars into it and it's great, but super short 😞 I too am waiting for that dream to come true...but I've got a strong feeling that Disney will invest in it as they often invest in even shortlived tech just for the hell of it.
They're going to be releasing some 360 content for The Last Jedi as we get closer to release, so I'd bet a game might be in the works somewhere.
