Completely disable oculus UI ??

how can i completely disable or override or over render on top of the oculus ui when my app is running?

You can't override Oculus system functionality. If you need a custom launcher (i.e. don't show the default Oculus Home and its menus) you can pay extra for an Oculus for Business headset. Only available to enterprise customers though. https://business.oculus.com/
