Moss is another great game that should not give you any problems (I guess).
If cockpit games with a physical Joystick/HOTAS on your desk are an option then Elite:Dangerous is strongly reccommended.
There are still many VR games in Oculus Home and beyond that were written for the XBOX controller instead of Touch. Those should be suitable for you in general.
Great games of that category that come to my mind:
- Alien Isolation with the MotherVR m
- Subnautica (on Steam)
- Blaze Rush
- Edge of Nowhere
- Chronos
- Trover saves the Universe (on Steam)

A lot of games have a seated option now. I played Stormland and Asgard's Wrath seated. And you never have to reach down. You can usually point your hand and things come to your hand when you grab. Even Vader Immortal has a seated option. But you do have to move your arms around a lot in the games I mentioned and may have to reach forward and up a bit.
