Running one out of a USB 3.1 gen2 type C socket and speeds aren't really any better than a normal cable.
2.0Gbps is what I'm getting but I also got that with a 'normal' cable.

2 to 2.7 gbps is the normal speed range. It really is about the latency and stability. So it's really a crap shoot, not all fiberoptic cables are equal, on the same token a copper based cable might be really good based on the quality of manufacturing. So in the end it's find something that works and stick with it. If it's a 3rd party cable you really should not worry.

I get 2.1 with my motherboard's port and 2.6 with my RTX2080TI's port. (original link cable)
