I found an asset on the asset store that does this really well. It's
called OctoXR. It costs a bit of money but it's extremely affordable
when you consider how much time it would take to do it yourself.
Did you ever find a way to do this? I've been struggling with getting it
to work for days! It's such a cool way to move around VR that I'm really
surprised nobody has done a quick tutorial.
